We create and sell a number of variations of barfi, the plain khoya barfi, the almond barfi, the modern chocolate barfi, and also the kaju barfi. Kaju is the urdu word for cashew nuts, and in our kaju barfi, ground cashew nuts are added for the delightful taste. It can also be considered an Indian version of the western fudge, but barfi has its own distinct scent and flavor. The barfi is cream in color, and additional cashew nuts may be garnished on the top of the barfi square to decorate it tastefully.
A perfect kaju barfi should be smooth, and the consistency should melt in your mouth. PakSweets keeps all of it in mind when we make our famous kaju barfi. People try to make kaju barfi at home too, but it is hard to get it just right so that is why we like doing all of the hard work. The mixture is cooked with vigorous stirring until it starts to set. Then it is rolled out on to a plate that is covered well with butter paper. When it has solidified, the kaju barfi is cut out in different shapes, the most popular being the diamond. These are then artistically arranged in platters and boxes, meant to please the eye at first glance.
Kaju Barfi is very popular in North India where it is called Kaju Katli. During the days of Diwali, people like to gift boxes of kaju barfi to their loved ones along with dry fruits. For weddings, the diamond cut kaju barfi is covered with silver foil for a festive look, but that is completely optional since it tastes just as good without it. The barfi, like almost all sweets, can keep for several weeks if stored in an airtight container, but our barfi is so delicious that people can’t make it last more than a few days.
